- 2 large eggs
- 1/4 cup coconut sugar
- 2 teaspoons vanilla bean paste
- 1 cup unsweetened almond milk
- 1 cup diced fresh strawberries
- 1/4 cup unsweetened shredded coconut (optional)
Instructions
- Melt 1/2 cup dark chocolate chips with coconut oil and coffee powder. Set aside to cool.
- Whisk eggs, coconut sugar, and vanilla bean paste until smooth.
- Gradually add almond milk to egg mixture, then incorporate cubed bread. Let it sit for 15 minutes.
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Layer half of bread mixture, strawberries, and chocolate chips in the dish, then repeat with remaining ingredients.
- Bake for 50-60 minutes or until center is set and a toothpick comes out clean.
