Instructions
- Combine peanut butter, powdered sugar, and softened butter in a bowl.
- Fold in crushed gingersnaps, keeping some chunky.
- Roll mixture into bite-sized balls and place on wax paper.
- Refrigerate for about 30 minutes.
- Melt white chocolate over low heat, stirring continuously.
- Dip each ball in melted white chocolate and sprinkle with gingersnap crumbs.
- Cool until chocolate hardens.
