  • 1 bag (about 5 1/2 cups) Fritos chips
  • 8 oz Mexican cheese blend, shredded
  • Sliced green onions (optional)
  • Sour cream (for serving)
  • Jalapeños (for serving)
  • Chopped cherry tomatoes (for garnish)

Instructions

  • Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking dish with cooking spray.
  • Brown the ground beef and chopped onion in a skillet, then drain excess grease.
  • Stir in taco seasoning and water, simmer for 3-4 minutes.
  • Add enchilada sauce and pinto beans, mix well.
  • Layer 4 cups of Fritos in the baking dish, followed by 1 cup of shredded cheese.
  • Pour the meat mixture over the cheese and Fritos, then add the remaining cheese on top.
