- 1 lb carrots, peeled and grated
- 2–3 tbsp fresh parsley or chives (optional: mint or coriander with a pinch of cumin for a Moroccan twist)
- Juice of 1/2 lemon
- 1 tsp Dijon mustard
- 3 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1 tsp maple syrup or honey
- 2 tbsp roasted hazelnuts, chopped (optional)
Instructions
- Preheat oven to 350°F (175°C) and roast hazelnuts.
- Grate carrots and mix with herbs in a bowl.
- Prepare the dressing by combining lemon juice, mustard, salt, and maple syrup. Whisk in olive oil.
- Toss grated carrots with half the dressing until coated.
- Transfer to a serving dish, top with hazelnuts, and serve immediately.
