- 4 bulbs fennel
- 1 cup Panko breadcrumbs
- ⅔ cup shredded Parmesan cheese
- ½ cup fresh parsley, finely chopped
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter, melted
Instructions
- Trim and cut the fennel into strips.
- Blanch the fennel in boiling water for 7 minutes, then drain.
- Mix Panko breadcrumbs, Parmesan cheese, parsley, salt, and pepper in a bowl.
- Layer fennel in a baking dish and drizzle with olive oil and melted butter.
- Add half of the breadcrumb mixture on top of the fennel.
- Spread the remaining breadcrumbs over the fennel.
- Bake at 375°F for 25 minutes covered, then 20 minutes uncovered until golden.
