Ingredients

  • 4 bulbs fennel
  • 1 cup Panko breadcrumbs
  • ⅔ cup shredded Parmesan cheese
  • ½ cup fresh parsley, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted

Instructions

  • Trim and cut the fennel into strips.
  • Blanch the fennel in boiling water for 7 minutes, then drain.
  • Mix Panko breadcrumbs, Parmesan cheese, parsley, salt, and pepper in a bowl.
  • Layer fennel in a baking dish and drizzle with olive oil and melted butter.
  • Add half of the breadcrumb mixture on top of the fennel.
  • Spread the remaining breadcrumbs over the fennel.
  • Bake at 375°F for 25 minutes covered, then 20 minutes uncovered until golden.
