Instructions
- Combine granulated sugar, brown sugar, pumpkin puree, and vegetable oil in a mixing bowl.
- Add eggs one at a time, then mix in salt, baking soda, and pumpkin pie spice.
- Incorporate vinegar and milk, then gradually mix in flour until smooth.
- Preheat oven to 350°F and prepare muffin pans.
- Fill muffin cups two-thirds full with batter and sprinkle with cinnamon sugar.
- Bake for 15-22 minutes until a toothpick comes out clean.
- Cool in the pan for a few minutes, then transfer to a wire rack.
