- 4 corn tortillas
- 4 large eggs
- 1 (15-ounce) can refried beans
- 1–1/2 cups homemade Huevos Rancheros Sauce
- Salt and pepper to taste
- 1 cup white Mexican cheese or feta cheese (optional)
- Chopped cilantro for garnish
- 2 large ripe tomatoes
- 2 tablespoons chopped onion
- 1 clove garlic
- 1 serrano pepper
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup reserved water from boiling tomatoes
Instructions
- Roast tomatoes and serrano pepper in simmering water for 5-10 minutes.
- Peel tomatoes and blend with serrano, onion, garlic, salt, pepper, and reserved water until smooth.
- Heat tortillas in the microwave for 45 seconds.
- Fry eggs in olive oil for 3-5 minutes.
- Warm refried beans in a saucepan for about 5 minutes.
- Assemble by layering tortillas, beans, fried eggs, sauce, cheese, and cilantro.
