  • 4 large eggs
  • 1 (15-ounce) can refried beans
  • 11/2 cups homemade Huevos Rancheros Sauce
  • Salt and pepper to taste
  • 1 cup white Mexican cheese or feta cheese (optional)
  • Chopped cilantro for garnish
  • 2 large ripe tomatoes
  • 2 tablespoons chopped onion
  • 1 clove garlic
  • 1 serrano pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup reserved water from boiling tomatoes

Instructions

  • Roast tomatoes and serrano pepper in simmering water for 5-10 minutes.
  • Peel tomatoes and blend with serrano, onion, garlic, salt, pepper, and reserved water until smooth.
  • Heat tortillas in the microwave for 45 seconds.
  • Fry eggs in olive oil for 3-5 minutes.
  • Warm refried beans in a saucepan for about 5 minutes.
  • Assemble by layering tortillas, beans, fried eggs, sauce, cheese, and cilantro.
