- 2–1/2 pounds russet or Yukon gold potatoes, thinly sliced
- 3 Tablespoons butter
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 2–1/2 cups heavy cream
- 3 Tablespoons all-purpose flour
- Salt and pepper to taste
- 1 teaspoon fresh thyme
- 1/2 teaspoon cayenne pepper (optional)
- 3 cups cheddar cheese, grated
- 1 Tablespoon chives, chopped (optional)
Instructions
- Preheat the oven to 375°F.
- Slice potatoes thinly and prepare them with skin on or off.
- Melt butter in a saucepan and sauté onion until softened. Add garlic and thyme.
- Stir in flour and gradually add heavy cream, mixing until smooth. Add salt, pepper, and cheese.
- Butter a baking dish and layer half of the potatoes, then cream sauce, and cheddar cheese.
- Repeat layers with remaining potatoes, sauce, and cheese.
- Cover with foil and bake for 40 minutes, then remove foil and bake for another 20 minutes until bubbly.
