  • 11½ cups powdered sugar (110 – 165 grams), sifted
  • 1 teaspoon vanilla extract
  • â…› teaspoon salt, just a pinch
  • 12 tablespoons whipping cream (1530 ml), or milk
  • food coloring, optional

Instructions

  1. Preheat the oven to 350℉ (180℃). Lightly grease a 9-inch pie plate or a 9-inch round springform pan.
  2. In a large bowl, combine softened butter, brown sugar, and granulated sugar. Cream until fluffy.
  3. Mix in the egg, additional egg yolk, and vanilla extract, ensuring to scrape down the sides of the bowl to incorporate all ingredients evenly.
  4. Gradually add flour, baking soda, and salt to the mixture, mixing on low speed until just combined.
  5. Fold in mini eggs and chocolate chips into the dough.
  6. Press the dough evenly into the prepared pan.
  7. Place in the oven and bake for 25-30 minutes, or until the top is set and golden brown. Adjust bake time based on your preference for chewy or gooey texture.
  8. After baking, let the cookie cake cool in the pan. If desired, gently press extra mini eggs on top while still warm.
