Instructions
- Preheat the oven to 350℉ (180℃). Lightly grease a 9-inch pie plate or a 9-inch round springform pan.
- In a large bowl, combine softened butter, brown sugar, and granulated sugar. Cream until fluffy.
- Mix in the egg, additional egg yolk, and vanilla extract, ensuring to scrape down the sides of the bowl to incorporate all ingredients evenly.
- Gradually add flour, baking soda, and salt to the mixture, mixing on low speed until just combined.
- Fold in mini eggs and chocolate chips into the dough.
- Press the dough evenly into the prepared pan.
- Place in the oven and bake for 25-30 minutes, or until the top is set and golden brown. Adjust bake time based on your preference for chewy or gooey texture.
- After baking, let the cookie cake cool in the pan. If desired, gently press extra mini eggs on top while still warm.
