Ingredients
- 3 medium ripe bananas
- 1/4 cup oil
- 1/4 cup butter melted
- 3/4 cup brown sugar
- 2 eggs room temperature
- 1 tsp vanilla extract
- 1/4 cup greek yogurt
- 1 tsp baking soda
- 1 tsp salt
- 1 cup flour
- 1/2 cup cocoa powder
- 1 cup chocolate chips
- 1/3 cup mini chocolate chips for topping
Instructions
- Preheat the oven to 350 degrees and spray a 9x5x3 loaf pan with non-stick spray, then set aside.
- In a bowl, whisk together the oil, melted butter, and brown sugar until well combined.
- Add the eggs, vanilla extract, mashed bananas, and Greek yogurt to the mixture and stir until blended.
- Gently fold in the flour, cocoa powder, baking soda, and salt, combining well, then add the chocolate chips without overmixing. Pour the batter into the prepared loaf pan and sprinkle with mini chocolate chips on top.
- Bake for 55-60 minutes in the preheated oven. Test for doneness by inserting a wooden skewer in the center; it should come out clean. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a cooling rack to cool completely before slicing.
