Ingredients

  • 5 strips of bacon
  • 1 medium onion, chopped small
  • 2 medium carrots, peeled & chopped small
  • 2 sticks of celery, chopped small
  • 3 cloves of garlic, minced
  • 1/2 teaspoon of Italian seasoning
  • 2 tablespoons of flour
  • 4 cups of chicken broth
  • 1 cup of heavy or whipping cream
  • 2 medium-to-large Russet potatoes, peeled & diced
  • 3/4 cup of corn (frozen or fresh)
  • 2 cups of cooked rotisserie chicken
  • Seasoning salt & pepper to taste

Instructions

  • Cook bacon until crispy, then remove and drain excess fat.
  • Sauté onion, carrots, and celery until tender, then add garlic and Italian seasoning.
  • Stir in flour and cook for one minute to thicken.
  • Add chicken broth while stirring to dissolve flour.
  • Mix in heavy cream, potatoes, and corn; bring to a boil.
  • Reduce heat and simmer for 15 minutes until potatoes are tender.
  • Add rotisserie chicken and bacon; cook for an additional 5 minutes.
  • Season with salt and pepper to taste.
