- 5 strips of bacon
- 1 medium onion, chopped small
- 2 medium carrots, peeled & chopped small
- 2 sticks of celery, chopped small
- 3 cloves of garlic, minced
- 1/2 teaspoon of Italian seasoning
- 2 tablespoons of flour
- 4 cups of chicken broth
- 1 cup of heavy or whipping cream
- 2 medium-to-large Russet potatoes, peeled & diced
- 3/4 cup of corn (frozen or fresh)
- 2 cups of cooked rotisserie chicken
- Seasoning salt & pepper to taste
Instructions
- Cook bacon until crispy, then remove and drain excess fat.
- Sauté onion, carrots, and celery until tender, then add garlic and Italian seasoning.
- Stir in flour and cook for one minute to thicken.
- Add chicken broth while stirring to dissolve flour.
- Mix in heavy cream, potatoes, and corn; bring to a boil.
- Reduce heat and simmer for 15 minutes until potatoes are tender.
- Add rotisserie chicken and bacon; cook for an additional 5 minutes.
- Season with salt and pepper to taste.
