- 2 tablespoons coarse Dijon mustard
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- 4 teaspoons fresh thyme, chopped
- 4 teaspoons garlic, minced
- 2 teaspoons lemon juice
- 1 teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper
- ¼ teaspoon crushed red pepper flakes
- 1 boneless prime rib roast, 6-7 pounds
Instructions
- Mix softened butter, mustard, chives, parsley, thyme, garlic, lemon juice, paprika, salt, black pepper, cayenne, and red pepper flakes.
- Let the prime rib sit at room temperature for about 2 hours.
- Preheat the oven to 500°F.
- Set the prime rib on a roasting rack and rub with cowboy butter. Roast for 15 minutes.
- Reduce the temperature to 325°F and roast for 13-15 minutes per pound, checking temperature.
- Let the roast rest for 30 minutes before slicing against the grain.
