  • 1 ⅓ cups (160 grams) all-purpose flour
  • ½ cup (50 grams) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • ¼ cup demerara sugar, optional for rolling

Instructions

  • Whisk together flour, cocoa powder, salt, and baking powder in a bowl.
  • Dissolve instant coffee in hot water and set aside.
  • Beat softened butter and sugar until creamy, then mix in egg, coffee, and vanilla.
  • Gradually incorporate the flour mixture until just combined.
  • Chill dough for at least 30 minutes.
  • Preheat the oven to 350°F (177°C) and prepare baking sheets.
  • Roll the dough into balls and optionally coat with demerara sugar.
  • Flatten slightly and bake for 13-15 minutes.
  • Cool on baking sheets for a few minutes before transferring to a wire rack.
