- ½ teaspoon baking powder
- ⅛ teaspoon salt
- ¼ cup demerara sugar, optional for rolling
Instructions
- Whisk together flour, cocoa powder, salt, and baking powder in a bowl.
- Dissolve instant coffee in hot water and set aside.
- Beat softened butter and sugar until creamy, then mix in egg, coffee, and vanilla.
- Gradually incorporate the flour mixture until just combined.
- Chill dough for at least 30 minutes.
- Preheat the oven to 350°F (177°C) and prepare baking sheets.
- Roll the dough into balls and optionally coat with demerara sugar.
- Flatten slightly and bake for 13-15 minutes.
- Cool on baking sheets for a few minutes before transferring to a wire rack.
