  • 2 large eggs
  • 2 cups fresh or frozen blueberries (thaw and drain if frozen)
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x5x3-inch loaf pan with softened butter and sprinkle with sugar.
  • Whisk together the flour, baking soda, and salt in a bowl.
  • Combine milk, vinegar, and vanilla; let sit.
  • Cream butter and sugar until fluffy.
  • Mash bananas and mix with butter-sugar mixture and eggs.
  • Combine dry and wet ingredients, alternating with milk mixture.
  • Fold in blueberries gently.
  • Pour batter into the prepared loaf pan.
  • Mix cinnamon and sugar; sprinkle on top.
  • Bake for 45-50 minutes or until a toothpick comes out clean.
  • Cool in the pan for 15-20 minutes before transferring to a wire rack.
