- 2 cups fresh or frozen blueberries (thaw and drain if frozen)
- ¼ cup (50g) granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9x5x3-inch loaf pan with softened butter and sprinkle with sugar.
- Whisk together the flour, baking soda, and salt in a bowl.
- Combine milk, vinegar, and vanilla; let sit.
- Cream butter and sugar until fluffy.
- Mash bananas and mix with butter-sugar mixture and eggs.
- Combine dry and wet ingredients, alternating with milk mixture.
- Fold in blueberries gently.
- Pour batter into the prepared loaf pan.
- Mix cinnamon and sugar; sprinkle on top.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Cool in the pan for 15-20 minutes before transferring to a wire rack.
