- ¼ cup cornstarch
- 2 cups whole milk
- 1 teaspoon vanilla extract
- ½ cup unsalted butter, cubed
- Whipped cream for topping (optional)
Instructions
- Preheat oven to 425°F (220°C) and coat pie pan with non-stick spray.
- Whisk together flour, salt, sugar, and baking powder in a large bowl.
- Mix in melted butter until crumbly, then stir in cold water to form dough.
- Pat dough into prepared pie pan and bake for 10-12 minutes until golden.
- In a saucepan, whisk together sugar, cinnamon, cornstarch, and milk over medium heat until boiling.
- Remove from heat and stir in vanilla and cubed butter until melted.
- Fold in holiday sprinkles and pour filling into baked crust.
- Bake again at 375°F (190°C) for about 20 minutes.
- Cool at room temperature then refrigerate for at least 2 hours before serving.
