- ⅓ cup (30 grams) Sliced Almonds
- 2 Teaspoons Mixed Spice
- 1 cup (110 grams) Unshelled Pistachios, roughly chopped
- 1 cup (120 grams) Dried Cranberries
Instructions
- Preheat the oven to 325°F (162°C) and line a baking sheet with parchment paper.
- In a bowl, mix melted coconut oil, maple syrup, brown sugar, vanilla extract, mixed spice, and orange zest.
- In a large bowl, combine rolled oats, sliced almonds, and mixed spice. Add the wet mixture and stir to coat.
- Pour the mixture onto the baking sheet and press down to form an even layer.
- Bake for 20 minutes, then add pistachios and bake for another 10 minutes.
- Cool for one hour, then fold in dried cranberries and break into chunks.
