  • ⅓ cup (74 grams) Brown Sugar
  • ⅓ cup (74 grams) Real Maple Syrup
  • 1 Tablespoon Vanilla Extract
  • Zest of 1 Large Orange
  • 3 cups (270 grams) Rolled Oats
  • ⅓ cup (30 grams) Sliced Almonds
  • 2 Teaspoons Mixed Spice
  • 1 cup (110 grams) Unshelled Pistachios, roughly chopped
  • 1 cup (120 grams) Dried Cranberries

Instructions

  • Preheat the oven to 325°F (162°C) and line a baking sheet with parchment paper.
  • In a bowl, mix melted coconut oil, maple syrup, brown sugar, vanilla extract, mixed spice, and orange zest.
  • In a large bowl, combine rolled oats, sliced almonds, and mixed spice. Add the wet mixture and stir to coat.
  • Pour the mixture onto the baking sheet and press down to form an even layer.
  • Bake for 20 minutes, then add pistachios and bake for another 10 minutes.
  • Cool for one hour, then fold in dried cranberries and break into chunks.
