Ingredients

  • 5 tablespoons unsalted butter, softened
  • 1 ½ teaspoons mint extract
  • ½ teaspoon salt
  • green gel food coloring (start with a couple drops and add more until desired color is achieved)
  • 4 to 5 cups powdered sugar
  • 10 ounces chocolate candy coating (ghirardelli melting wafers, almond bark, candiquik, etc.)

Instructions

  1. In a medium-sized bowl, mix the corn syrup, softened butter, mint extract, salt, and food coloring until well combined.
  2. Gradually stir in 1 cup of powdered sugar at a time until the mixture is too stiff to stir.
  3. Knead the mixture, adding more powdered sugar as necessary, until it no longer sticks to your hands.
  4. Roll out the mixture between two sheets of parchment paper, and refrigerate for 60-90 minutes or until firm. Alternatively, roll into 1-inch balls and place on trays or sheets lined with wax paper, flattening them afterward.
  5. Use a small round cutter to cut out the patties.
  6. Melt the chocolate candy coating according to package instructions.
  7. Dip each candy into the melted chocolate using a fork or dipping tool, tapping off any extras, and then place them back on the lined sheets.
  8. Repeat the process until all candies are coated and allow to set until the chocolate is firm before storing in an airtight container.
