Ingredients

  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold
  • 34 tablespoons cold water
  • 2 cups whole milk
  • ½ cup heavy whipping cream
  • ½ cup granulated sugar
  • 3 large eggs
  • 3 tablespoons cornstarch
  • 2 tablespoons unsweetened cocoa powder
  • ⅔ cup chopped dark chocolate
  • ½ cup whipping cream
  • 12 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • chocolate shavings, optional

Instructions

  1. In a medium bowl, combine the flour, sugar, and salt.
  2. Cut cold butter into the mixture with a pastry cutter or fork until pea-sized chunks remain.
  3. Gradually add cold water, stirring until the dough holds together.
  4. Shape the dough into a disk, wrap in plastic and chill for at least 1 hour or freeze for 30 minutes.
  5. Preheat oven to 425°F.
  6. Roll out the pastry to fit a 9" pie plate, pressing it into the sides. Folding excess pastry underneath to form a thick edge.
  7. Prick the bottom and sides of the crust with a fork and line with parchment paper weighing it down with pie weights or beans.
  8. Bake for 10-15 minutes until edges are golden brown. For a crisper bottom, remove pie weights and bake for an additional 5-6 minutes.
  9. Cool the crust for at least 10 minutes before filling.
