  • ¾ cup cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon espresso powder
  • 1 teaspoon morton kosher salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 extra-large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup freshly brewed hot coffee
  • 1 cup unsalted butter, at softened room temperature
  • 3 cups powdered sugar
  • â…› teaspoon morton kosher salt
  • 3 tablespoons half and half
  • 2 teaspoons pure mint extract
  • 1 teaspoon pure vanilla extract
  • green food coloring, if desired
  • 3 ounces finely chopped good quality semi-sweet chocolate

Instructions

  1. Preheat your oven to 350°F. Grease a 9" x 13" pan with butter and then line the bottom with parchment paper, greasing the parchment as well. Dust the inside with flour and tap out any excess.
  2. In a stand mixer bowl with a paddle attachment, combine flour, sugar, cocoa powder, baking powder, baking soda, espresso powder, and salt. Mix on low speed until combined.
  3. Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients. Mix on medium speed until well blended. Reduce to low speed and slowly incorporate hot coffee into the batter. Scrape the bowl and mix on high for 1 minute.
  4. Pour the batter into the prepared pan and bake for about 40 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 15 minutes, then invert onto a platter and let it cool completely before frosting.
