- 3 cups chopped romaine lettuce
- 3 cups shredded napa cabbage
- 2 cups cooked shredded chicken
- 1/2 cup shredded carrots
- 1 red bell pepper chopped
- 1/2 cup shelled edamame
- 1/4 cup thinly sliced green onions
- 1/4 cup chopped cilantro
- 1/3 cup toasted sliced almonds
- 2 teaspoons toasted sesame seeds
- 1/4 cup rice vinegar
- 2 tablespoons honey
- 2 tablespoon avocado oil
- 1 tablespoon toasted sesame oil
- 2 teaspoons low sodium soy sauce or tamari
- 1 teaspoon grated fresh ginger
- 1 teaspoon toasted sesame seeds
- Kosher salt and freshly ground black pepper to taste
Instructions
- In a jar with a lid or a bowl, combine the ingredients for the vinaigrette. Shake or whisk until fully mixed, then refrigerate until serving.
- In a large bowl, toss all the salad ingredients together.
- Drizzle the vinaigrette over the salad gradually, tossing until everything is well coated. Serve immediately.
