- 1 honeycrisp apple diced
- 1 cup red grapes halved
- 2 stalks celery chopped
- 3 tablespoons red onion minced
- 1/3 cup chopped walnuts
- salt and fresh cracked black pepper to taste
Instructions
- In a small bowl, whisk together the yogurt, mayonnaise, and lemon juice; set aside.
- In a large bowl, combine the chickpeas, apple, grapes, celery, onions, and walnuts.
- Pour the dressing over the salad ingredients and toss until well combined and coated.
- Season with salt and pepper to taste, and serve over butter lettuce.
