Ingredients

  • 2 tablespoons olive oil plus more as needed
  • 1/2 cup grated red onion (from 1 large onion)
  • 1 pound ground chicken
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon minced garlic
  • 2 tablespoons finely chopped cilantro or use more mint
  • 2 tablespoons finely chopped fresh mint or use more cilantro
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon red pepper flakes increase or decrease to preference
  • Salt and pepper
  • 1/2 cup plain greek yogurt
  • 1/4 cup finely chopped fresh mint
  • 1 teaspoon minced garlic
  • 1 large lemon 1/2 tsp zest & 1 tbsp juice
  • 11/2 tablespoons olive oil
  • 1/4 teaspoon ground cumin
  • pitas lightly charred or warmed
  • veggies veggies like tomato, cucumber, and red onion salad, plus green leaf lettuce

Instructions

  1. In a small bowl, whisk together all sauce ingredients and season with salt and pepper. Refrigerate until needed.
  2. Grate the onion into a large bowl. Add remaining kofta ingredients and mix thoroughly with hands, seasoning to taste.
  3. With damp hands, divide the mixture into 8 equal portions and shape each around a skewer, forming long koftas. Chill for 20 minutes or longer.
  4. For stovetop cooking: Heat oil in a skillet over medium-high heat and cook koftas in batches for 5-6 minutes, turning until browned. For grilling: Preheat grill and cook koftas for 6-8 minutes, flipping halfway.
  5. Toast pitas lightly, spread yogurt sauce on one side, and fill with lettuce, koftas, and veggies. Drizzle with more sauce and serve.
