  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon adobo seasoning
  • 2 teaspoons kosher salt, divided
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 red or orange bell pepper, diced
  • 1 chipotle chili in adobo, diced
  • 1 (12 ounces) bottle of lager beer
  • 1 cup chicken or vegetable stock
  • 1 (14.5 ounces) can tomato sauce
  • 1 (14.5 ounces) can black beans, drained and rinsed
  • 1 (14.5 ounces) can kidney beans, drained and rinsed
  • Optional for garnish: shredded Colby Jack cheese, sliced avocado, cilantro

Instructions

  • Heat olive oil in a large pot over medium-high heat.
  • Mix cumin, paprika, adobo seasoning, and salt; rub on chicken breasts.
  • Brown chicken breasts for about 3 minutes on each side; set aside.
  • Sauté diced onion for 3-5 minutes until translucent.
  • Add bell pepper and chipotle chili; cook for an additional 3 minutes.
  • Stir in minced garlic for 30 seconds.
  • Deglaze the pot with half of the lager beer.
  • Add remaining beer, tomato sauce, stock, and beans; stir well.
  • Nestle chicken back in, bring to boil, then simmer for 25 minutes.
  • Shred chicken and mix back into chili.
  • Serve hot, garnished with cheese, avocado, and cilantro.
