Instructions
- Combine gluten-free flour, oat flour, baking soda, and cinnamon in a bowl and whisk.
- Cream together butter and coconut sugar until light and creamy.
- Add maple syrup, egg, and vanilla; mix until smooth.
- Gradually mix in dry ingredients and oats until just combined. Fold in raisins and chocolate chips.
- Chill the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Scoop dough onto baking sheet, adding extra chocolate chips on top.
- Bake for 10-12 minutes until golden on the bottoms.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
