- 1 tablespoon dried oregano

- 1 teaspoon freshly cracked black pepper
- 1/4 teaspoon crushed red pepper (or to taste)
- 3 (15-ounce) cans cannellini white beans
- 3/4 cup water
- 1 tablespoon fresh rosemary, chopped fine (or 1 teaspoon dried)
- 2 cups smoked gouda or mozzarella cheese, grated
- 1/2 cup Parmesan cheese, finely shredded
- Crusty French bread, for serving
Instructions
- Thinly slice the garlic and shallots. Preheat a large oven-safe skillet over medium heat and add olive oil.
- Sauté the shallots for three minutes, then add garlic and cook for an additional minute.
- Stir in the tomato paste and season with oregano, salt, black pepper, and crushed red pepper. Cook for two minutes to deepen flavors.
- Add partially drained beans and water to the skillet. Simmer the mixture on medium-high heat.
- Lower the heat and cook for ten minutes, stirring occasionally.
- Remove from heat, stir in fresh rosemary, and adjust seasoning if needed.
- Top with smoked gouda and Parmesan cheese.
- Broil on high for 2-4 minutes, checking every 30 seconds until cheese is melted and golden brown.
- Serve hot with crusty French bread.
