  • 3 (15-ounce) cans cannellini white beans
  • 3/4 cup water
  • 1 tablespoon fresh rosemary, chopped fine (or 1 teaspoon dried)
  • 2 cups smoked gouda or mozzarella cheese, grated
  • 1/2 cup Parmesan cheese, finely shredded
  • Crusty French bread, for serving

Instructions

  • Thinly slice the garlic and shallots. Preheat a large oven-safe skillet over medium heat and add olive oil.
  • Sauté the shallots for three minutes, then add garlic and cook for an additional minute.

  • Add partially drained beans and water to the skillet. Simmer the mixture on medium-high heat.

  • Top with smoked gouda and Parmesan cheese.
  • Broil on high for 2-4 minutes, checking every 30 seconds until cheese is melted and golden brown.
