Ingredients

  • ½ cup butter
  • 20 oz mini marshmallows
  • 9 oz box rice crispy cereal
  • 2 tsp vanilla
  • ½ tsp salt
  • red and orange food coloring
  • 1 cup green candy melts
  • 1 cup orange candy melts
  • orange sprinkles

Instructions

  1. Line a 9×13 pan with parchment paper.
  2. Melt butter in a large pot over medium-low heat.
  3. Add 1 1/2 bags of mini marshmallows to the melted butter and mix until fully melted, keeping the heat low.
  4. Remove from heat and stir in vanilla, salt, and food coloring until desired color is achieved.
  5. Add half of the rice crispy cereal to the marshmallow mixture and stir thoroughly.
  6. Incorporate the remaining marshmallows and rice cereal into the mixture.
  7. Spread the mixture evenly in the prepared pan.
  8. Let cool for about 10-15 minutes.
  9. Slide the treat onto a cutting board using the parchment paper.
  10. Cut into 8 equal rectangles, then cut each rectangle into triangles to form carrot shapes.
  11. Melt green candy melts in a microwave-safe bowl in 30-second increments, stirring in between.
  12. Pipe 12 V-shaped stems on parchment paper and refrigerate for 10 minutes to harden.
  13. Flip the rice crispy treats onto the parchment and cut into carrot shapes.
  14. Melt orange candy melts in a separate bowl and drizzle over the carrot treats.
  15. Immediately add sprinkles on top while the chocolate is soft.
  16. Dot the top of each carrot with orange candy melt and attach the stem.
