- 1 pound thick-cut bacon
- 2–3 large onions
- 3 sprigs fresh thyme
- 1 sprig fresh rosemary
- 1 tablespoon Worcestershire sauce
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 8 ounces cream cheese, softened
- ½ cup sour cream
- ½ cup mayonnaise
- 8 ounces shredded cheddar cheese
- 8 ounces shredded mozzarella cheese
Instructions
- Cook the bacon in a skillet until crispy, about 10 minutes.
- Remove bacon and reserve 2 tablespoons of bacon fat. Cool and crumble the bacon.
- Caramelize the onions with thyme and rosemary in the reserved bacon fat for 35-45 minutes.
- Stir in brown sugar, garlic, and Worcestershire sauce to the onions for additional flavor.
- Mix cream cheese, sour cream, and mayonnaise in a bowl until smooth, then fold in the cheese and onion mixture.
- Spread in a greased baking dish, top with cheddar and crumbled bacon, and bake at 375°F for 20-25 minutes.
