  • 1 tablespoon olive oil
  • 8 oz andouille sausage sliced into half moons
  • ½ pound chicken breast cut into bite-size pieces
  • 2 tablespoons cajun seasoning divided
  • 1 medium onion finely diced
  • 1 medium red bell pepper sliced
  • 2 large garlic cloves finely chopped
  • 1 tablespoon tomato paste
  • 1 cup orzo
  • 2 cups chicken stock
  • ½ cup heavy cream
  • 1 cup baby spinach
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat the olive oil in a wide, deep skillet over medium heat.
  2. Add the andouille sausage and cook until browned and crisp around the edges. Transfer to a plate and set aside.
  3. Rub the chicken pieces with 1 tablespoon of Cajun seasoning and add to the skillet. Cook until lightly golden and just cooked through.
  4. Add the onion and red bell pepper, cooking for 4-5 minutes until softened.
  5. Add the garlic and the remaining tablespoon of Cajun seasoning. Cook for another minute.
  6. Stir in the tomato paste and cook for about 1 minute for deeper flavor.
  7. Add the orzo and stir well to coat it evenly.
  8. Pour in chicken stock and bring to a gentle simmer. Cook, stirring often, until orzo is tender and most liquid is absorbed.
  9. Stir in the heavy cream and spinach. Cook until spinach wilts and sauce looks silky.
  10. Return sausage to the pan, season with salt and black pepper to taste, and serve hot.
