- 1 tablespoon olive oil
- 8 oz andouille sausage sliced into half moons
- ½ pound chicken breast cut into bite-size pieces
- 2 tablespoons cajun seasoning divided
- 1 medium onion finely diced
- 1 medium red bell pepper sliced
- 2 large garlic cloves finely chopped
- 1 tablespoon tomato paste
- 1 cup orzo
- 2 cups chicken stock
- ½ cup heavy cream
- 1 cup baby spinach
- Salt and freshly ground black pepper to taste
Instructions
- Heat the olive oil in a wide, deep skillet over medium heat.
- Add the andouille sausage and cook until browned and crisp around the edges. Transfer to a plate and set aside.
- Rub the chicken pieces with 1 tablespoon of Cajun seasoning and add to the skillet. Cook until lightly golden and just cooked through.
- Add the onion and red bell pepper, cooking for 4-5 minutes until softened.
- Add the garlic and the remaining tablespoon of Cajun seasoning. Cook for another minute.
- Stir in the tomato paste and cook for about 1 minute for deeper flavor.
- Add the orzo and stir well to coat it evenly.
- Pour in chicken stock and bring to a gentle simmer. Cook, stirring often, until orzo is tender and most liquid is absorbed.
- Stir in the heavy cream and spinach. Cook until spinach wilts and sauce looks silky.
- Return sausage to the pan, season with salt and black pepper to taste, and serve hot.
