Ingredients

  • 2 apples, sliced
  • ⅓ cup walnuts or pecans, toasted and chopped
  • ¼ cup parmesan cheese, shaved (or ⅓ cup crumbled cheddar)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • Freshly cracked black pepper

Instructions

  • Remove outer leaves and core of cabbage, then slice into fine strips.
  • Core and slice apples into quarters or cubes.
  • Toast walnuts in a pan over medium heat until golden brown and fragrant.
  • Mix dressing ingredients in a jar and shake well.
  • Combine cabbage, apples, half of the parmesan, and dressing in a bowl and mix thoroughly.
  • Let it rest for 10 minutes and serve, garnished with remaining walnuts and parmesan.
