Ingredients
- 5 small zucchini (or 4 medium-size)
- 2 cups cooked rotisserie chicken, shredded
- 1/3 cup Frank's Red Hot Sauce
- 1/4 cup Greek yogurt
- 1/4 cup mayonnaise
- 1/2 teaspoon lemon juice
- 1/3 cup shredded cheddar cheese
- 1/2 bunch green onions, chopped
- 3 tablespoons blue cheese, crumbled
- 5 Ritz crackers, crushed
- Ranch or blue cheese dressing, for serving
- Salt and pepper, to taste
- Nonstick cooking spray
Instructions
- Preheat oven to 375°F.
- Slice zucchini in half lengthwise and scoop out centers.
- Spray zucchini halves with cooking spray, season with salt and pepper, and bake for 15 minutes.
- Mix shredded chicken with Frank's Red Hot Sauce in a bowl.
- Add Greek yogurt, mayonnaise, lemon juice, and cheddar cheese to chicken; mix well.
- Toss in chopped green onion white parts and set greens aside.
- Scoop out baked zucchini centers and mix with chicken mixture.
- Stuff zucchini boats with the chicken filling.
- Sprinkle blue cheese and crushed Ritz crackers on top.
- Bake for an additional 10 minutes.
