  • 1/3 cup Frank's Red Hot Sauce
  • 1/4 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • 1/3 cup shredded cheddar cheese
  • 1/2 bunch green onions, chopped
  • 3 tablespoons blue cheese, crumbled
  • 5 Ritz crackers, crushed
  • Ranch or blue cheese dressing, for serving
  • Salt and pepper, to taste
  • Nonstick cooking spray

Instructions

  • Preheat oven to 375°F.
  • Slice zucchini in half lengthwise and scoop out centers.
  • Spray zucchini halves with cooking spray, season with salt and pepper, and bake for 15 minutes.
  • Mix shredded chicken with Frank's Red Hot Sauce in a bowl.
  • Add Greek yogurt, mayonnaise, lemon juice, and cheddar cheese to chicken; mix well.
  • Toss in chopped green onion white parts and set greens aside.
  • Scoop out baked zucchini centers and mix with chicken mixture.
  • Stuff zucchini boats with the chicken filling.
  • Sprinkle blue cheese and crushed Ritz crackers on top.
  • Bake for an additional 10 minutes.
