- 1.25 lbs chicken breast, diced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 green onions, chopped and divided
- 1/4 cup buffalo sauce
- 2 tbsp chives, chopped
- 1/4 cup blue cheese, crumbled
- 3 romaine hearts, chopped
- Ranch dressing or dressing of choice
Instructions
- Spray a large skillet with nonstick cooking spray.
- Cook the diced chicken breast in the skillet, season with salt and pepper until golden and cooked through.
- In a bowl, combine the cooked chicken, carrot, celery, and 1 green onion.
- Pour in the buffalo sauce and mix well.
- Divide chopped romaine into bowls and top with the chicken mixture.
- Sprinkle with chives and blue cheese, and drizzle with dressing.
