  • 2 boxes Jiffy Cornbread Mix (8.5 oz each)
  • 1 stick Butter (melted)

Instructions

  • Preheat the oven to 350°F (175°C).
  • Lightly beat the eggs in a large mixing bowl.
  • Add cottage cheese and shredded cheddar cheese to the eggs and mix well.
  • Stir in chopped onion and broccoli. Season with salt and pepper.
  • Incorporate Jiffy cornbread mix, one box at a time.
  • Pour melted butter into a baking dish, then fill with batter.
  • Bake for 40-45 minutes until a toothpick comes out clean.
  • Cool for 15 minutes before slicing and serving.
