- 2 boxes Jiffy Cornbread Mix (8.5 oz each)
- 1 stick Butter (melted)
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly beat the eggs in a large mixing bowl.
- Add cottage cheese and shredded cheddar cheese to the eggs and mix well.
- Stir in chopped onion and broccoli. Season with salt and pepper.
- Incorporate Jiffy cornbread mix, one box at a time.
- Pour melted butter into a baking dish, then fill with batter.
- Bake for 40-45 minutes until a toothpick comes out clean.
- Cool for 15 minutes before slicing and serving.
