- 3 pound (1.360) kg boneless leg of lamb, fat trimmed
- kosher salt
- black pepper
- Early Harvest Greek extra virgin olive oil
- 12 garlic cloves, 6 thinly sliced and 6 minced
- 2 teaspoons dried rosemary, or 2 tablespoons minced fresh
- 2 teaspoons fresh thyme, from 4 or 5 springs
- 1 teaspoon dry oregano
- 3/4 teaspoon sweet paprika
- Juice of 1 lemon
- 1 pound pearl onions, peeled (or shallots, if you prefer)
- 1 cup dry red wine
- 1/2 cup low-sodium broth, beef or chicken broth is fine
- Fresh rosemary or thyme sprigs, garnish
Instructions
- Pat the lamb dry and season it generously with kosher salt and black pepper on all sides. Let it sit at room temperature for about 45 minutes to an hour if time allows.
- Heat a large skillet over medium heat, adding a little extra virgin olive oil. Brown the lamb on all sides for about 7 minutes. (Increase heat if necessary.) Remove the skillet from heat.
- After the lamb cools, cut slits into it and insert the thinly sliced garlic. In a bowl, mix minced garlic, rosemary, thyme, oregano, and paprika. Add lemon juice and olive oil, then rub this mixture onto the lamb.
- Place pearl onions (or shallots) in the bottom of a slow cooker. Pour in the wine and broth, then place the spiced lamb on top.
- Cover the slow cooker; cook on high for 3 to 4 hours or on low for 5 to 6 hours until the lamb is fork-tender.
- Transfer the lamb to a serving platter, topping it with the cooking juices and onions. Garnish with fresh herbs.
