  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter until combined.
  3. Sprinkle the baking soda and salt over the banana mixture. Stir to incorporate.
  4. Add the granulated sugar to the mixture, along with the beaten egg and vanilla extract. Mix until well combined.
  5. Gently fold in the all-purpose flour, being careful not to over-mix. The batter should be slightly lumpy.
  6. If using, fold in the chopped walnuts until they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
