- 2 pounds uncooked gnocchi
- 8 ounces burrata cheese, pulled apart
- Fresh basil, for garnish
Instructions
- Heat butter in a skillet over medium heat, add shallots and garlic, cooking until tender.
- Stir in tomato paste and cook for 5 minutes.
- Pour in vodka, deglaze the skillet.
- Add reserved pasta water, heavy cream, and parmesan cheese; stir until smooth.
- Mix in uncooked gnocchi, ensuring full coverage with the sauce.
- Top with burrata and additional parmesan.
- Bake at 400°F for 15-20 minutes until bubbly and golden.
