- 1 Pound lean ground beef
- 1/2 Cup diced onion (yellow or white)
- 2 Tbsp sweet relish
- 1 Tbsp yellow mustard
- 1/4 Cup ketchup
- 1 1/2 Cups shredded cheddar cheese
- Salt and pepper to taste
- 12 (6-inch) flour tortillas
Instructions
- Heat olive oil in a skillet over medium heat, cook ground beef and onions until meat is no longer pink and onions are soft.
- Drain excess fat, add sweet relish, mustard, and ketchup to meat mixture, and stir well.
- Incorporate shredded cheddar cheese until melted, then season with salt and pepper.
- Lay out tortillas, fill each with 1/4 cup of the beef mixture, and roll tightly.
- Brush tops with olive oil and place seam side down on a baking sheet.
- Preheat oven to 350°F and bake taquitos for 15-20 minutes until golden and crispy.
