- 2 tablespoons olive oil, divided
- 1 1/4 pounds boneless skinless chicken breasts
- Salt and pepper to taste
- 2 apples, cored and cut into approximately 1/2 inch thick wedges
- 1 cup sliced shallots or onion
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- 1/2 cup low sodium chicken broth
- 1/2 cup apple cider
- 1 tablespoon Dijon mustard
- 1/4 cup heavy cream
Instructions
- Heat one tablespoon of olive oil in a large skillet over medium heat until shimmering.
- Add the chicken breasts to the skillet, season with salt and pepper, and cook for 6-7 minutes on each side until fully cooked.
- Remove the chicken, cover it with foil, and set aside.
- Wipe the skillet clean, add the remaining olive oil, and sauté shallots, apple wedges, rosemary, thyme, salt, and pepper for 7-9 minutes.
- Pour in chicken broth, apple cider, and Dijon, stirring to combine and simmer.
- Add heavy cream, stir, return chicken to the skillet, and simmer for another 1-2 minutes.
