  • 2 apples, cored and cut into approximately 1/2 inch thick wedges
  • 1 cup sliced shallots or onion
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • 1/2 cup low sodium chicken broth
  • 1/2 cup apple cider
  • 1 tablespoon Dijon mustard
  • 1/4 cup heavy cream

Instructions

  • Heat one tablespoon of olive oil in a large skillet over medium heat until shimmering.
  • Add the chicken breasts to the skillet, season with salt and pepper, and cook for 6-7 minutes on each side until fully cooked.
  • Remove the chicken, cover it with foil, and set aside.
  • Wipe the skillet clean, add the remaining olive oil, and sauté shallots, apple wedges, rosemary, thyme, salt, and pepper for 7-9 minutes.
  • Pour in chicken broth, apple cider, and Dijon, stirring to combine and simmer.
  • Add heavy cream, stir, return chicken to the skillet, and simmer for another 1-2 minutes.
